Unfamiliar, but tasty and healthy mushrooms
Autumn is approaching, and mushroom fever too. The main mushrooms collected are that in the European part, and in Siberia, they are about the same: ceps, chubby, boletus, chanterelles, oily, mushrooms, russula, mushrooms, thrush, mushrooms, honey agarics. Other mushrooms are harvested depending on the region, the mushroom’s advancement or its propensity for risky experiments. And their name (other mushrooms) is the legion. As, however, and mushroom pickers, which every year becomes more and more. Therefore, all known mushrooms may not be enough. It is necessary to study the little-known. And I know for sure that some very worthy representatives come across among them. I will tell about little-known, but tasty and healthy mushrooms in this article.
Scene: neighborhood of the city of Goryachiy Klyuch of the Krasnodar Territory, hornbeam-oak forest of the foothills of the Caucasus. Time of action: very mushroom - 2018, from August to winter.
For example, in the still hot time, a mushroom grows in the lower part of the trunk of an old oak tree, which is not edible at all and causes strange associations. Not only I, apparently, had such associations, since it is called a mushroom liverwort (fistulin vulgaris)sometimes called Mushroom liver.
An absolutely amazing mushroom with flesh blushing in the air, blushing juice and a slightly sour taste due to the high content of vitamin C. Young mushrooms are more spherical and dry, with age they are pulled out with a wide tongue or fan, and the top becomes mucous and shiny.
This mucous skin must be removed during cooking. The fried liverwort is tasty, has not yet been tried in another form, the mushroom is not found in large quantities. I’ll also find it - a marin, which has a very unusual color in its flesh.
The main thing is that it is impossible to confuse it with any other mushroom, and can be seen from afar - go and look at the old oaks closer to the base. It grows in all regions where there are oaks. This mushroom destroys the wood, so picking it and eating it is a very useful thing.
Although, if you walk and look only at the oaks, you can skip another interesting mushroom, which not only catches your eye, but with all its appearance shows that it does not deserve absolutely no attention. At first glance it seems that he is old and probably rotten. I took a picture of him because he looks like beautiful dark flowers.
I didn’t take it right away. Black fox (Horn funnel) - one of the most delicious mushrooms. I discovered these mushrooms in August and they grew, tangled underfoot, until mid-December. Frosts were not noticeable, night (-5) they easily experienced under the foliage.
The mushroom itself is a dark brown, thin-walled funnel. There are no worms, just like an ordinary fox. However, there is nowhere for the worm to live there.
Information about the fungus on the Internet is the most enthusiastic, including information about the immunomodulating and antitumor properties, but only taste and smell can confirm by personal experience.
Very tasty fried with onions, although scary in appearance. Dry mushroom powder gives sophistication to baked and stewed meat, any sauce. And how good and aromatic is the cheese soup with these mushrooms! In general, the combination of black chanterelles with cheese is very advantageous. The smell is brighter during heat treatment and drying, and a fresh mushroom does not particularly smell.
Sometimes you can confuse it only with gray fox, edible, but tasteless. And it grows, as they say, throughout Russia.
Mushrooms, like no other forest products, require attentiveness, concentration and unhurriedness. Each time it takes some time to adapt, so that the eyes begin to distinguish masterfully masked mushrooms from dry foliage. Such a mushroom is sitting in the moss and leaves - try it, find it!
Above - fox-fox, only unusually large and thick. So what! Now there are many thick ones - why can’t mushrooms be? But if you turn it over, a touching and funny “hedgehog” wrong side opens, having nothing to do with the structure of the usual mushrooms.
it yellow hedgehogvery good mushroom. It grows in families, like chanterelles, in one place you can immediately pick up a basket. And it tastes like chanterelles. The only negative, in my opinion: his very decorative needles (the husband called them "architectural excesses") crumble at the first touch.
You bring home mushrooms, all in these adhering "needles", clean them for a long time, scolding yourself with bad words for contacting them, but then you get a beautiful roast from light and plump mushrooms. Sometimes patience or time is not enough to completely clean, it turns out to be unpresentable, however, it does not affect the taste at all.
It is also a fairly common mushroom, growing throughout Russia, it is impossible to confuse inedible with anything.
In the forest often come across blackberries, crushed by mushroom pickers who are not aware of their edibility - very unpleasant! And immediately it reveals the past in front of the inquisitive mushroom picker.
While warm in the forest there are funny white large "eggs", from which bright orange mushrooms later hatch. They do not meet as families, therefore, having first met an egg and then a mushroom, it is not so easy to understand that this is one and the same thing. But carefully examining and digging one and the other, you can figure it out.
Ovary (Caesar mushroom) is fully consistent with the epithet "Caesar" - look, taste, smell. Perhaps, even mushrooms in comparison with it turn very pale and stewed.
The leg and hat are dense, of a beautiful egg-yellow color, and the smell is like a hazelnut with fruit. Exceptionally tasty in all kinds - fried, boiled, pickled. The color does not lose during heat treatment; it looks elegant and bright in the bank, causing convulsive swallowing with one look.
Unfortunately, it grows where it is warm - the North Caucasus, Crimea, Primorye. Although some claim that they collected it in the suburbs. All hope for global warming.
It is impossible to confuse with anything - the yellow color of the legs and flesh distinguishes this mushroom from inedible ones.
About the treachery of mushrooms
In mushroom places, having entered the excitement, almost everyone forgets about the surroundings and becomes attached to some landmarks on the ground. The treachery of mushrooms regarding luring into the thicket of gullible mushroom pickers is reflected in fairy tales, works of classics and reports of the Ministry of Emergencies. So you have to be careful. Better - with a compass, and even better - with those who know the area.
It’s good when there is a connection in the forest, you can see an incomprehensible mushroom right on the Internet right away, but even for the European part it’s a great success, and there’s nothing to say about the Trans-Urals.
Mushrooms are cleverly disguised. Edible - under inedible and vice versa. It is advisable to preliminarily see about deadly poisonous ones, and do not touch them, or even kick them. Collect mushrooms that are of interest, put them in separate containers, put them at home on food wrap and carefully study all the information on the Internet.
And most importantly - do not be greedy! There is no complete certainty - it is better to throw it away. If you have confidence, but there is no experience with use, you can cook and try a bit, and the rest can be eaten tomorrow.
